Shoofly Pie is a delicious, molasses-rich pie perfect to offer at a pie stand. The customers will go crazy for it. Or make for someone you love, it’s a perfect and scrumptious gift.

Crust

Basic Pie Dough

Filling

  • 1 cup brown sugar,
  • 1 cup molasses, light or dark,
  • 1 egg,
  • 1 tsp baking soda,
  • 1 tbsp flour,
  • 2 cups boiling water.

Crumb mixture

  • 2 cups flour,
  • 1 cup brown sugar,
  • 1⁄2 cup shortening,
  • 1 tsp baking soda,
  • pinch of salt.

Preparation

  1. Prepare the Basic Pie Dough for two 9-inch single-crust pies.
  2. Prepare the Filling: In a large heat-safe bowl, combine the brown sugar, molasses, egg, baking soda, and flour, then stir in boiling water and set aside to cool.
  3. Prepare the Crumb Mixture: With a spoon or fork, combine all crumb mixture ingredients in a bowl. Fill unbaked pie crusts by slowly pouring in 11⁄2 cups liquid mixture, then 11⁄2 cups of the crumbs. Repeat until you use all the liquid mixture. At the end, sprinkle the rest of crumbs evenly over the top.
  4. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and bake for 50 minutes. Test with a toothpick. When it comes out clean, it’s done.
