Chess Pie is simple, rich, and best served with strong coffee. Many people find it quite addictive. Try taking just one bite, there’s a high chance that you won’t stop eating until it’s gone. 

Crust

Basic Pie Dough for a single-crust pie

Filling

  • 2 cups sugar,
  • 2 tbsp flour,
  • 1 tbsp cornmeal,
  • 5 eggs,
  • 2⁄3 cup buttermilk,
  • 1⁄4 cup butter, melted,
  • 2 tsp vanilla.

Preparation

  1. Prepare the Basic Pie Dough for a single-crust pie, and crimp the edges.
  2. Prepare the Filling: In a large bowl, mix together the sugar, flour, and cornmeal. Whisk together the eggs and buttermilk and stir in the mixture of dry ingredients. Whisk in the melted butter and vanilla, then pour the mixture into the crust shell.
  3. Bake at 350 degrees for at least 45 minutes, or until filling is set.
